manila tortilla

When fresh, our tortillas are best eaten soft, simply warmed through. Serve them in a basket and eat as you would bread alongside a meal or fill with a topping for soft tacos.

After a few days, when dried out slightly, our tortillas can be fried or baked (either cut up or whole) to give them a new lease of life – just as stale bread is great toasted. These are for dishes such as tostadas, chilaquiles, crispy tacos, flautas and of course nacho chips.

For creative recipe ideas, check out "The Taco Cleanse".

All our tortillas are handmade, hence supply is limited. Once we receive your order, please wait for order confirmation through text including payment instructions.

Peel and finely slice a small red onion then add a pinch of salt and cover with cider vinegar and a splash of water. Cover and leave to sit until the onions turn pink. Marinate a piece of boneless pork shoulder. Add a little oil to a heavy bottomed casserole dish and brown the meat on all sides, then pour the marinade into the pan, cover and roast at 180°C, for a couple of hours or until completely tender. When cool enough to handle, shred the meat and serve on warmed tacos with the pink pickled onions.
